Park Hyatt Cabo Del Sol is a gorgeous, nearly-finished resort — beautiful rooms, huge never-busy pools, amazing grounds, an adult-only beach, and some of the best food guests have had (the octopus at Mesa Madre is a must). Staff go way beyond: a birthday guest never felt better cared for, champagne arrived at a plunge pool, staff detoured through cacti to avoid waking kids, and Cesar, Noe and Eduardo made guests feel like VIPs. Two notes: the food is pricey, and finishing works are still underway.
