Eremo Della Giubiliana is a beautifully-restored historic estate in tranquil rural Sicily near Ragusa — different well-appointed rooms, unparalleled serenity, a paradisiacal abundant breakfast of local products, wonderful local dining for most, and kind top staff; a cottage stay was meraviglioso. Caveats though: one dinner was surprisingly tasteless (a five-star-value mismatch), a mattress was punishingly hard, the pool is unheated, and a noticeable smell lingered.
